Hummus with Veggie sticks
Rich in protein and fiber, hummus is an easy dip you can whip up in no time! All you need is a tin of chickpeas, a tablespoon of tahini, 1 teaspoon cumin, 1 garlic clove, squeeze of lemon, salt, pepper and olive oil. Place all in a blender and blend! Add olive oil until your desired consistency. Cut up your favourite vegetables into sticks and voila! Enjoy!
Easy Banana Pancakes
These are our absolute favourite and better yet there's only 2 ingredients!! All you need is 1 ripe banana thoroughly mashed and 2 eggs lightly beaten. Mix the two together, heat your pan with some butter or oil. Drop 2 tablespoons and cook through. Serve with your favourite topping (I personally love a little maple syrup).
Another easy recipe that takes no time at all! For this recipe you can use your taste buds to fill these. You will need a sheet of puff pastry. Heat your oven to 180C. You can add whatever ingredients you like, a filling we like to use is Vegemite, butter and cheese (YUM!). Spread over the pastry and leave about 2 cms to the end. Roll the pastry and cut into 2 cm wide. Place on the side onto a lined baking tray. Place in oven and bake until pastry has become puffy.
These are great for summer! Blend desired fruit (an idea could be some blueberries, raspberries and mango), a tablespoon of Greek yoghurt and a splash of milk. You could even put these into some molds and have some yummy home made icy-poles for a hot day!
